Chicken Bruschetta Pasta

Ingredients
  • Bruschetta:
  • 2 Tbsp Olive Oil
  • 14.5 oz can of Diced Tomatoes
  • ½ tsp Garlic Salt
  • ¼ C Chopped Fresh Basil
  • Alfredo Sauce:
  • ½ C Butter
  • 2 Cloves of Fresh Garlic
  • ¼ tsp White Pepper
  • 2 C Heavy Cream
  • ½ C Shredded Parmesan Cheese
  • ¾ C Shredded Mozzarella Cheese
  • Pasta:
  • ½ LB Farfalle Pasta
  • 1 Tbsp Olive Oil
  • 1 LB Fresh Mushrooms
  • 4 slices Bacon
  • 2 Chicken Breasts
Instructions
  1. Mix together the four Bruschetta ingredients and set aside, allowing to marinate.
  2. In a large saucepan over medium heat, melt ½ cup butter.
  3. Crush and mince 2 gloves of garlic.
  4. Add to butter.
  5. Let butter/garlic mixture simmer for 2 minutes.
  6. Add ¼ tsp white pepper and 2 C heavy cream.
  7. Simmer for 3 minutes.
  8. Add the parmesan and mozzarella cheeses.
  9. Stir occasionally until cheese is melted.
  10. Stir in bruschetta mix.
  11. Cover, remove from heat, and set aside.
  12. Meanwhile, cook pasta according to box directions.
  13. Slice 4 pieces of bacon into thin strips.
  14. Heat 1 Tbsp olive oil in a large sauce pan.
  15. Add bacon and chicken breasts.
  16. Cook thoroughly.
  17. Add mushrooms.
  18. Cook for 3 minutes.
  19. Add chicken/bacon/mushrooms to sauce mixture.
  20. Serve over farfalle pasta.
