My husband is Italian, and loves to cook. Best combination ever, am I right?! So the kids and I are the lucky ones who get to try his delicious creations, and this panini was no exception! We have been fans of the Bertolli Riserva sauces for some time now, and the Balsamic Vinegar and Carmelized Onions made the perfect dipping sauce for Charley’s Chicken Mozzarella Panini with Red Onions.
The hubs and I are constantly looking through Bertolli’s Cooking School for meal inspiration. We found the idea for a panini, and then created our own! We layered grilled chicken, red onion, and fresh mozzarella, and then toasted it on Italian bread in our panini maker. So easy! And of course, the best part was the Bertolli Riserva Balsamic Vinegar and Carmelized Onions dipping sauce!
And for our side – a tomato, basil, and fresh mozzarella salad with a barrel-aged balsamic vinegar glaze. Delicious!
